This isn't my lunch!

I've had the same thing for lunch for most of grad school: A baked tofu and cucumber sandwich. Mmmm. It's a very good lunch. Preparing the tofu is simple and can be done on weekends to last through the week, although sometimes I marinate my tofu but forget to bake it, and that makes me sad. It's quick and easy to assemble, and it tastes great! I have no complaints with my lunch, but when I eat lunch with my labmates, they make fun of it. They find its constancy humorous. They tell their friends about my lunch, and the mockery spreads. I try to come to its (my?) rescue by telling them that it isn't always the same. Sometimes it has spinach instead of cucumber. Sometimes it has both! (Although then it's very hard to get my sandwich tupperware to close.) But this isn't enough variability for them. At this point, a friend usually sticks up for me by lauding me for knowing what I like and staying true to it. Exactly! I dislike most sandwich fillings. I tolerate cheese sandwiches, I've never liked peanut butter (which apparently is full of fungal toxins anyway), and I revile cold cuts (except for roast beef, but tofu has a much smaller footprint...).

In response to so much pressure, I've started mixing up my lunch. 2008 is the year of variety (within certain contraints). So far, in addition to my baked tofu & cucumber sandwiches, I've had Grit tofu & avocado wraps; Vietnamese sandwiches, albeit modified to use broiled tofu instead of roast chicken and liverwurst; and Grit tofu salad sandwiches. They've all been very good, but all require quite a bit more prep than my old stand by. Oh well. Sunday is already my day for cooking; I might as well spend even more of it in the kitchen.

I think this week I'll try frittata sandwiches (no tofu in that!). I don't know what to do next. Any suggestions? It might be time to start thinking outside of the sandwich. Or maybe just time to go back to my first true love, tofu & cucumber sandwiches, and start the rotation all over again!
